ピルスナーモルト70%、生小麦30%の伝統的なタービッドマッシュの麦汁を熟成ホップと共に4時間煮沸し、醸造所の空気から取り込んだ微生物のみで発酵させ、オーク樽で数年間熟成させたランビックスタイルの自然発酵エール「オープンワーク」。

今作は、ロングアイランドのミケランジェロ・ヴィンヤードで9月下旬に収穫されたピノノワールグレープを房ごと皮と茎に接触させながらマセレーション。完成したブレンドは、ベリーとチェリーの爽やかな香りに、レザーのようなファンキーさ、柑橘の酸味、オークのタンニン、そしてブレット感を帯びた熟成ホップのスパイシーさが重なり合う。

The Open Work Pinot Noir is conditioned on pinot noir grapes from Michaelangelo Vineyards in Long Island, harvested in late September and macerated in whole clusters with skin and stem contact. It is bright and beautiful with clean, unmuddied flavors?zippy notes of berry and cherry are bolstered by underlayers of leathery funk, citrus-spiked acidity, oak tannins, and brett-laced aged-hop spice.
